VINIFICATION

The parcels of fruit for Waihopai were sourced from the Cromwell Basin. Consistent with the intent behind the Waihopai range, a minimal handling philosophy was employed.

WINEMAKERS COMMENTS

The vineyards used in the Waihopai range have been consistently producing high quality wines. Advanced technical vineyard management practice beyond the usual, and a hands-on wine making approach is the signature for these wines. This wine was fermented in stainless steel tank to retain aromatics and fruit flavours. Aged in barrel to develop the richness and complexity.

FOOD MATCH

Leaner meats, smoky and braised flavours match well. Earthy flavours on the whole, especially slow cooked. Try with the sweeter vegetables, or the autumn fruits of figs, plums and blackberries.
