Grown without irrigation, the vines develop the fruit over and above the
vegetation, producing small succulent berries with intense fruit flavours and savoury characteristics. The aim is to produce ripe fruit with a medium alcohol level and we only make 1000 cases a year – all high quality pinot noir.

Syrah and Viognier are grown at altitude at viticultural extremes the results are quite singular and perfumed. Harvested from the single estate of ‘Finca del Val’ situated at 950 metres altitude, from a parcel of 0.5 hectares of Syrah situated on ‘cantos’ or pudding stones.

Outlawed in Ireland for over 1000 years, Poitín is regarded as the original Irish spirit first distilled in 584AD.
We craft Glendalough from an old poitín recipe using malted barley and the almost lost, Irish sugar beet. We ferment for over 72 hours which gives a higher alcohol percentage and a more robust flavour. Our higher cut point gives heads and tails that are more in line with a whiskey.
